From the Pantry: Corn and Black Bean Salsa

 

Black bean and corn salsa is a super easy to make and super tasty side dish. You can use it on salads, on chicken or fish, or tacos. It's even good with some fresh cut up mango or pineapple! 

Ingredients: 

1 can corn, drained

1 can black beans, drained and rinsed

1 small can diced tomatoes, drained

1 can green chilis

1 tbsp chili powder

2 tbsp lime juice

¼ cup finely chopped onion (red or white)

1 tsp minced garlic (½ tsp garlic powder will work too)

Salt to taste

 

Method: 

Combine all ingredients in a bowl. Salt to taste. Adding some Tabasco sauce will make it spicier without too much extra liquid--or, you could use different types of peppers! Cilantro is also an excellent add on. 

 

This salsa is good on chips, tacos and nachos. It’s also great in a burrito or sprinkled on top of a salad!
