
Here’s a twist on a classic favorite—BBQ chicken legs! Brining your chicken before you cook it helps give it more flavor and it helps keep the chicken extra juicy!
Simple Chicken/Pork Brine
Yield: 8 cups
Ingredients:
- 6 cups of water
- ½ cup salt
- ½ cup sugar
- ½ cup apple cider vinegar
- 1 tsp red pepper flakes
- 2 tbl black pepper
- 4 whole garlic cloves, smashed
Bring all ingredients to boil in a pot. Allow to cool before use. Discard after using. Can be kept up to a month in the refrigerator BEFORE use.
Grilled BBQ Chicken Legs
Yield: 4 servings
Ingredients:
- 4 chicken legs (leg/thigh quarters work too)
- 1 recipe Simple Chicken/Pork Brine
- 2 cups of your favorite BBQ sauce
- 2 tbl honey
- 1 tbl lemon juice
- 2 tbl canola oil
- 1 cup water
Equipment:
- Cast iron pan
- Grill grate
- Tongs
- Foil
Brine the chicken for up to 2 hours. Heat the grill grate and cast-iron pan over the fire. Pour the oil in the pan and heat. Add the chicken and add water. Cover with foil and cook chicken for 20-25 minutes or until done. Remove chicken from pan and carefully empty ¾ of the water. Add the honey, lemon juice and BBQ sauce and combine. Add chicken and cook again for 10-15 minutes until sauce thickens a little. Remove chicken and grill until lightly charred. Serve!
