Vegan Crockpot Lentil Chili

 

Easy, delicious, and healthy! This lentil chili has it all! 

2 cups French lentils

1 cup red lentils

1 medium onion (about 1 cup chopped)

3-4 large carrots (about 1 cup chopped) (feel free to use pre chopped frozen carrots!)

4 ribs celery (about ½ cup chopped) 

1 large can diced tomatoes

1 can of water

¼ cup olive oil

¼ cup chili powder

1 tbsp ground cumin

1 tbsp garlic powder

2 tsp black pepper

Salt to taste 

 

Heat your oil in a pan and add the onions. Saute until translucent, about 5 minutes. Add the carrots and celery and cook for another 5 minutes. 

 

Add a pinch of salt and your spices and cook, stirring constantly for another minute or two. 

 

Add the lentils, tomatoes and water. At this point, add everything into the crockpot and cook on low for 8 hours or high for 4-6. If it’s on high, make sure to stir occasionally.

 

You could also make it all over a campfire!
